  • 10 g (1 tbsp) hot water
  • 50 g (½ cup) icing sugar
  • 110 g (½ cup) unsalted butter, softened
  • 25 g (½ large beaten egg)
  • 140 g (1¼ cups) all-purpose flour
  • 15 g (2 tbsp) cornstarch
  • ½ tsp ground cinnamon

For Decoration:

  • Melted dark chocolate
  • Chopped pistachios

Ingredients

  • For the Dough:

  • 6 g (1 tbsp) instant coffee

  • 10 g (1 tbsp) hot water

Prepare the Coffee Mixture

Dissolve instant coffee in hot water. Set aside to cool slightly.

Make the Dough

Beat softened butter and icing sugar until light and creamy. Mix in the beaten egg and cooled coffee mixture. Sift in the flour, cornstarch, and cinnamon. Fold until a soft dough forms. Chill the dough for 20 minutes for easier shaping

Shape and Bake

Preheat oven to 170°C (340°F). Roll dough into small balls and press lightly with a fork or cookie stamp. Place on a lined baking tray. Bake for 12–15 minutes, or until edges are lightly golden. Cool completely on a rack.

Decorate

Dip or drizzle cookies with melted dark chocolate. Sprinkle with chopped pistachios. Let chocolate set before serving.
