Craving pizza but don’t want to wait for delivery? This pepperoni pizza quesadilla is your five-minute lifesaver. One skillet, one tortilla, melty mozzarella, and zesty sauce come together for the fastest pizza fix ever.

I first made this when my kids wanted pizza and delivery felt like forever. Five minutes later, they were dipping quesadilla slices in marinara and I knew this was going to be a regular. If you love quick, cheesy comfort food, this one’s for you.

Why You’ll Love This Recipe

  • Ready in just 5 minutes.
  • Requires only one skillet and a spatula.
  • Perfect for kids, students, or busy weeknights.
  • Easy to customize with veggies, different meats, or extra cheese.

Ingredients

  • 1 large flour tortilla
  • 2–3 tablespoons pizza sauce
  • 1/3 cup shredded mozzarella cheese
  • 6–8 slices turkey or beef pepperoni
  • Optional: dried oregano or Italian seasoning
  • Optional: crushed red pepper flakes

Equipment

  • Nonstick skillet
  • Spatula
  • Knife
  • Cutting board

Instructions

  1. Heat a nonstick skillet over medium heat (about 1 minute to preheat).
  2. Place the tortilla flat and spread 2–3 tablespoons pizza sauce over half.
  3. Sprinkle 1/3 cup mozzarella cheese evenly, then add 6–8 pepperoni slices.
  4. Optional: add a pinch of oregano, Italian seasoning, or red pepper flakes.
  5. Fold the tortilla in half and place in the skillet. Press gently with a spatula.
  6. Cook for 1–2 minutes per side until golden brown and cheese is fully melted.
  7. Slice into wedges and serve hot with marinara or ranch for dipping.

Notes & Tips

  • Don’t overload with sauce — too much will make the tortilla soggy.
  • Press with a spatula while cooking for crispier edges.
  • Watch closely — tortillas brown quickly.

Variations

  • Swap mozzarella for provolone or cheddar.
  • Add mushrooms, peppers, or olives for a veggie twist.
  • Use turkey pepperoni or go meatless for a lighter version.
  • Make it spicy with jalapeños or hot sauce drizzle.
